I like green beads

Green glass beads on pounded silver hoops.... there is not nearly as much to describe about jewelry as there is about the recipes I concoct.

First taste post: Roasted sweet potato veggie stew

sweet potato stew:

1 large sweet potato

1 large carrot cut thick

1/2 sweet white onion

1 roma tomato

cut asparagus, 1/2 a bunch maybe

minced garlic

olive oil

salt and pepper

oregano

1 cube vegetable bullion 

3 cups water

1/2 c quinoa

3 c chopped kale

1/2 can chick peas

1 bay leaf

400 degree oven: roast chopped sweet potatoes, carrots, onion tossed in olive oil drizzle, salt, pepper, oregano, toss on cookie sheet, 20 min

roast chopped tomato, asparagus, garlic in same on separate cookie sheet (takes less time), toss occasionally, 15 min (can have both sheets in oven at once)

prepare bullion in 3 cubs boiling water, reduce to simmer, add quinoa, cook 5-10 min

add chopped kale, more salt and pepper, cook till kale is softened 5 min

add roasted vegetables, chick peas and bay leaf

simmer 30 min stirring occasionally 

serves 4... yummy
